Sesame Peanut Noodles


Quick & Easy Sesame Peanut Noodles

(Thai Sesame Peanut Noodles In Instant Pot Pressure Cooker )

Serves 6

For noodles:

Spaghetti noodles  10 oz /285 grams
Vegetable stock 16 oz/2 cups
Water  8 oz/1 cup
Onion(optional) 1/2 cup, sliced
Peanut Oil 2 teaspoon
Ginger-garlic paste* 1 teaspoon
Salt 2 teaspoons or to taste

For the sesame-peanut sauce:

Peanut butter(natural-no added sugar) 1/2 cup
Toasted sesame oil 2 tablespoons
Soy sauce(low sodium) 2 tablespoons
Rice vinegar 1 tablespoon
Honey 2 tablespoons
Chilli- garlic sauce 1 teaspoon or to taste
Ginger-garlic paste or minced 1.5 teaspoons
Water/vegetable broth 1/2 cup

Vegetables:

Carrots 3/4 cup, julienned Cabbage 1 cup, shredded Peppers 1/2 cup, sliced Green onions 1/2 cup, sliced Edamame (frozen) 1/2 cup

Garnish: Sesame seeds, crushed peanuts(optional),cilantro,green onions.

Stovetop method to cook noodles:

1.Boil water in a large pot, add salt and add the noodles,ginger-garlic paste.Cook the noodles as per the package directions. Add the edamame towards the end of cooking. 2.Drain the noodles, drizzle with little oil and set aside. 3. Blend all the ingredients for the sauce. Add the prepared sauce and vegetables. Toss to combine. 4. Garnish with green onions,cilantro,and sesame seeds. 5. Serve the noodles warm or cold.

Electric pressure cooker method:

1. Start saute mode, add oil. Add sliced onion,ginger-garlic. Saute for one minute. Cancel saute mode.Add the noodles in criss-cross form. Add the vegetable broth, water,edamame, salt,oil. 2. Cook on high pressure for 4 minutes. Let the pressure release naturally for 5 minutes then release any excess pressure. 3. Blend all the ingredients for the sauce. Add the prepared sauce and vegetables. Toss to combine. 4. Garnish with green onions,cilantro,and sesame seeds. 5. Serve the noodles warm or cold.
